Spinach Salad with Marinated Onions

A delicious spinach salad for anyone who loves onion! Works well as a side salad or a vegetarian lunch.

Ingredients

Marinated Onions

  • ½ medium red onion sliced thin
  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar or apple cider vinegar
  • 1 tsp. Salt
  • ½ tsp. Oregano
  • ¼ tsp. Pepper

Salad

  • 8 oz. fresh spinach
  • ½ cup feta crumbled
  • cup glazed pecans roughly chopped
  • cup dried cranberries

Instructions

  1. Combine marinated onion ingredients and stir until well combined and onions are fully coated and submerged. Let marinate for at least an hour or up to 2 days in a bowl at room temperature.

  2. Toss marinated onion mixture with salad ingredients and serve.
