Vanilla Cheesecake Pie

Rich and creamy vanilla cheesecake in a pie pan with little effort.

  • 1 ¼ cup graham cracker crumbs
  • ½ stick butter melted
  • 1 T. sugar

Cheesecake Filling

  • 2 8 oz. blocks of cream cheese, softened
  • cup sugar
  • 2 eggs room temperature
  • 1 tsp. Vanilla extract


  • 1 cup sour cream
  • 3 T. sugar
  • 1 tsp. Vanilla extract


  1. Preheat oven to 350*F.
  2. Stir together crust ingredients and press into a 9 inch pie pan.
  3. Using a stand mixer or beaters on low, mix cream cheese and sugar until smooth.
  4. Add eggs, one at a time, and vanilla, while mixing.
  5. Pour onto the crust and bake for 30 minutes.
  6. Stir together topping ingredients and spread over cheesecake, once removed from the oven.
  7. Let cool to room temperature then chill for at least two hours before serving.
